Description Vézelay "Les Angelots"

Estate

La Soeur Cadette is a family-run estate located in the heart of Burgundy. Founded by Valentin Montanet, the project follows environmentally friendly and terroir-driven viticulture. The estate practices organic farming (uncertified) with low intervention in both vineyard and cellar. Long fermentations and minimal input allow authentic expression of vintage and origin.

Vineyard

The vines are located in the Vézelay area, on the southern edge of Chablis, with limestone slopes typical of northern Burgundy. The soils consist of marl and Kimmeridgian limestone, similar to nearby Chablis. Moderate altitude and a cool continental climate contribute to slow ripening and excellent natural acidity in Chardonnay.

Wine

La Soeur Cadette's Vézelay is a dry white wine that showcases clear and vibrant aromas. The wine reflects the elegance and freshness of cool-climate Chardonnay. It is structured, mineral and easy-drinking—a gastronomic wine both precise and sincere. Suitable for early drinking or short-term cellaring.

Vintage

The 2021 vintage was affected by spring frost, resulting in a lower yield. However, the grapes were healthy and produced wines with excellent freshness and aromatic purity. This vintage is marked by finesse, tension, and a return to classic Burgundian style.

Vinification & Aging

Grapes were hand-harvested at optimal ripeness. Fermentation took place with indigenous yeasts, in stainless steel tanks to preserve fruit purity. Aging on fine lees lasted several months to build texture without sacrificing freshness. Sulfur use was minimal, and bottling was done without aggressive filtration.
