A family heritage in the heart of Burgundy
Founded in 1973 by Hubert Lamy, Domaine Hubert Lamy is located in Saint-Aubin, a picturesque village in the Côte de Beaune, Burgundy. The Lamy family has been cultivating vines since 1640, passing down exceptional winemaking expertise through generations. Today, the estate spans 18.5 hectares, with 80% planted to Chardonnay and 20% to Pinot Noir, primarily distributed across the appellations of Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet, and Santenay.
Sustainable and innovative viticulture
Under the direction of Olivier Lamy, Hubert's son, the estate adopts sustainable viticultural practices, favoring organic methods and a reasoned approach. Olivier is renowned for experimenting with high-density plantings, reaching up to 30,000 vines per hectare, aiming to enhance the concentration and complexity of the grapes. This innovative approach reflects his commitment to quality and respect for the terroir.
Precise winemaking for authentic wines
In the cellar, Olivier Lamy emphasizes precise winemaking to best express the unique character of each plot. The grapes are gently pressed, and fermentations occur with indigenous yeasts. The white wines are aged in 300 to 600-liter oak barrels, with minimal new wood, for an average of 24 months on lees, followed by an additional 6 months in tanks. This approach preserves the freshness, purity, and minerality of the wines.
Signature cuvées reflecting the terroir
Among the estate's flagship wines, the Saint-Aubin 1er Cru "En Remilly" stands out for its pronounced minerality and elegance. The Puligny-Montrachet "Les Tremblots" offers a pure and crystalline expression of Chardonnay, while the Chassagne-Montrachet 1er Cru "Les Macherelles" captivates with its aromatic richness and complexity.
