Should you open this 2021 now for its freshness or wait for greater complexity?

It can be opened now to enjoy its lively attack, ripe citrus notes and saline finish. If you prefer aromatic complexity, the recommended cellaring period is 5 to 7 years; however, there is no need to wait to enjoy it.

Is decanting essential for this still white wine?

No: a brief decant can help it open up, but it is optional. Serve it at 10–12 °C to appreciate its floral and fruity nuances and silky texture.

Can this wine accompany a meal ranging from fish to cheese?

Yes, the suggested pairings include both roasted sea bass fillet and Époisses or Brillat-Savarin. Its freshness and saline finish provide a common thread, while its silky texture and the fullness imparted by fine lees allow it to complement richer textures.

Is this a good choice if I like full-bodied whites without any oaky taste?

Yes: ageing on fine lees adds fullness and a silky texture, without any influence from oak. Vinification in stainless steel vats preserves freshness and aromatic purity; the profile remains lively, floral and fruity rather than marked by oak.

For what occasion should I choose this wine over a bottle of sparkling wine?

For a lunch with friends or an intimate celebration when you want to serve a still white wine at the table. This Coteaux Champenois offers a chance to discover another expression of Champagne, without the bubbles, alongside asparagus risotto or farm-raised poultry with mushroom sauce.
