In 1843, Edmond Besserat established Besserat de Bellefon in Aÿ, at the heart of the Champagne region. In 1930, a Parisian restaurateur sought a champagne delicate enough to pair with an entire meal. In response, Victor Besserat created the now-iconic "Cuvée des Moines," inspired by the Benedictine monks who pioneered double fermentation.
