For four generations, the Gerbais family has cultivated vineyards in Celles-sur-Ource, at the heart of Côte des Bar. Now led by Aurélien Gerbais, the estate spans 18 hectares, comprising 10 hectares of Pinot Noir, 4 hectares of Chardonnay, and 4 hectares of the rare Pinot Blanc. This family heritage reflects a passion and expertise passed down through generations, dedicated to producing champagnes that faithfully mirror their terroir.
Located in the Aube region, Côte des Bar is characterized by soils rich in Kimmeridgian limestone, akin to those found in Chablis, Burgundy. This geological feature imparts a pronounced minerality and unique aromatic complexity to the estate's champagnes. The vineyards, planted on the slopes of the Ource Valley, benefit from a favorable microclimate with varied exposures, contributing to the diversity and richness of the wines produced.
Committed to environmental stewardship, Champagne Pierre Gerbais has practiced organic viticulture since the 1990s, certified by the Ampelos label since 1996. The soils are mechanically tilled without the use of chemical herbicides or pesticides, promoting biodiversity and vine health. Manual harvesting ensures meticulous grape selection, guaranteeing optimal quality for champagne production.
In the winery, grapes are gently pressed using a traditional Coquard press, ensuring delicate juice extraction. Alcoholic and malolactic fermentations occur in stainless steel tanks with indigenous yeasts, without added sulfur. The wines are then aged on lees for 30 to 36 months, developing remarkable complexity and depth. Dosage is performed with rectified concentrated must (RCM), preserving the purity and authenticity of the aromas.
Among the estate's flagship champagnes, the "Grains de Celles" Extra Brut cuvée is a blend of 50% Pinot Noir, 25% Chardonnay, and 25% Pinot Blanc. This champagne delights with aromas of stone fruits, Japanese pear, and subtle lemony notes, featuring marked minerality and a refreshing palate. Each cuvée from Champagne Pierre Gerbais embodies a steadfast commitment to quality and the authentic expression of the Champagne terroir.
