A Visionary Collaboration
Champagne Clandestin was born from the partnership between Bertrand Gautherot, the renowned winemaker of Vouette & Sorbée, and his dynamic collaborator, the Burgundian Benoît Doussot. Together, they set out to highlight the overlooked parcels of the Aube, unveiling authentic and expressive champagnes.
Showcasing Hidden Terroirs
The name "Clandestin" refers to the hidden vineyards of the Aube, particularly those situated on Kimmeridgian soils with northern exposures. These often-overlooked plots offer exceptional potential, which the duo harnesses to produce cuvées that faithfully reflect their origin.
Respectful Winemaking Practices
The grapes, sourced from vineyards certified organic by Ecocert, are hand-harvested and naturally fermented with indigenous yeasts. Benoît Doussot favors the use of French oak barrels of various sizes for fermentation and aging, allowing controlled micro-oxygenation and a pure expression of the terroir.
Distinctive Cuvées
Among Champagne Clandestin's creations, the Boréal and Austral cuvées stand out. Boréal is crafted from Pinot Noir sourced from north-facing parcels, offering pronounced freshness and minerality. Austral, on the other hand, comes from south-facing vines, revealing richer aromas and a generous texture. Each cuvée is produced without dosage, emphasizing the purity of the fruit and terroir.

Adhering to a philosophy of minimal intervention, Champagne Clandestin is dedicated to sustainable practices both in the vineyard and the cellar. This approach includes limited use of sulfur and a focus on soil health, ensuring wines that are authentic and environmentally respectful.
