Olivier Merlin is regarded as one of the finest winemakers in the Mâconnais. Since settling in the region in the late 1980s, he has pursued a craft-based and terroir-focused approach. His estate is known for expressive, balanced Chardonnay wines. He has played a key role in showcasing the potential of southern Burgundy appellations. Vineyard

The Saint-Véran vineyard lies in the Mâconnais on limestone and clay-limestone soils, with optimal exposures. The climate features significant temperature shifts that favor ripening. Vintage

The 2020 vintage in Burgundy was early and warm. Harvesting was rapid and under excellent sanitary conditions. The resulting wines show both concentration and preserved freshness. Vinification & Aging

Grapes are hand-harvested and carefully sorted. Fermentation takes place in oak barrels at controlled temperatures to preserve terroir expression. Aging continues for about 11 months in oak, with limited new wood. This enhances minerality while preserving fruit. The wine is bottled with minimal filtration.
