Should Clandestin Austral 2020 be opened now or kept for longer?

Appearance: Pale yellow with golden reflections, fine and persistent mousse.
Nose: Fresh red fruit aromas like strawberry and cherry, combined with subtle brioche notes and chalky minerality.
Palate: Dense and precise, beautifully fresh with balanced acidity, finishing saline and slightly lemony.

Its stated peak drinking window runs from 2025 to 2035, so you can open it now or keep it to let its aromas evolve. Its fine acidity and the concentration of the 2020 vintage support its ageing potential.

Does Austral 2020 have enough presence to pair with roast veal chop?

Yes, its dense, precise palate gives it enough presence to stand up to a roast veal chop with thyme, a pairing that is explicitly recommended. Its freshness and balanced acidity provide a counterpoint to this density.

What profile should I expect from Austral 2020 compared with Clandestin's Chardonnay cuvées?

Austral 2020 offers an expression made exclusively from Pinot Noir, with notes of strawberry and cherry, a dense palate, and a saline finish. Les Revers and Les Grandes Lignes are listed as Chardonnay cuvées, but the information provided does not make it possible to compare their richness or liveliness with Austral's.

Can Austral 2020 accompany a wedding anniversary dinner rather than just an aperitif?

Yes, it is recommended for this occasion and has pairings that make it suitable for serving at the table: grilled Breton lobster, scrambled eggs with summer truffles, or Comté aged for 24 months. Its density, freshness, and saline finish make it a fitting choice to accompany the meal.
