Should I open this 2022 Crémant de Bourgogne now or let it age a little longer?

Appearance: Pale yellow with golden highlights, fine and persistent mousse.
Nose: Aromas of white fruits, green apple, delicate floral notes and a hint of brioche.
Palate: Lively and balanced, showing good freshness, creamy texture and a slightly mineral finish.

You can open it now to enjoy its freshness, green apple aromas, and floral notes. The product page indicates that it can gain complexity through 2027: keep that date in mind if you'd like to wait a little longer.

At what temperature should I serve this Crémant, and should I decant it?

Serve it between 8 and 10 °C, straight after opening. Decanting isn't necessary: serving it this way lets you appreciate its freshness and fine bubbles.

Would this Crémant pair better with fish tartare or a creamier dish?

Both are possible: sea bream tartare with citrus is one of the recommended pairings, complementing its lively, fresh palate. Its creamy texture and the volume imparted by lees ageing also make it a good match for green asparagus risotto or poultry in a light sauce.

Is this Crémant mainly crisp, or does it also have some roundness?

This 100% Chardonnay from the Champy Boris estate combines both qualities. Green apple and a slightly mineral finish highlight its freshness, while its creamy texture and brioche note give it a fuller, more rounded profile.

What role could this Crémant play at brunch or an aperitif with friends?

It suits both occasions thanks to its balance of freshness and aromatic richness. For an aperitif, serve it with cheese gougères; at brunch, it would go particularly well with sea bream tartare with citrus.
