Estate

Champagne Clandestin is a discreet estate founded by Benoît Doussot and Jules Métras, focused on showcasing the unique expression of Côte des Bars terroirs. Their approach favors craftsmanship, precision, and minimalist vinification for authentic champagnes.

Vineyard

Located in the Côte des Bars, the vineyards lie on clay-limestone soils of the Kimmeridgian era, akin to those in Chablis. The semi-continental climate allows for optimal ripeness while preserving the grapes’ freshness.

Wine

This non-vintage Blanc champagne captures the pure character of Pinot Noir grown in southern Champagne. Mineral-driven, precise, and elegant, it embodies the estate’s commitment to transparent winemaking.

Vintage

This is a non-vintage (NV) cuvée composed of multiple harvests to achieve balance and consistency. It includes well-selected reserve wines to enhance complexity.

Vinification & Aging

Natural fermentations are conducted using indigenous yeasts, followed by aging on fine lees in both barrels and stainless-steel tanks. Secondary fermentation follows the traditional method with minimal dosage to maintain terroir purity.
