A sommelier turned cider artisan
Formerly the sommelier at L’Arpège in Paris, Eric Bordelet left the world of wine to return to his native Normandy and reinvent cider with a winemaker’s mindset. In 1992, he took over his family’s orchards in southern Normandy, on schist-rich soils, and began applying the same precision and respect seen in top vineyards.
A unique terroir for expressive fruit
The orchards are planted at altitude on schist soils in the Maine region, between Brittany and Normandy. Bordelet grows over 30 heritage apple, pear, and quince varieties using organic and biodynamic farming. The soil, exposure, and fruit diversity contribute to extraordinary aromatic complexity and minerality.
Winemaker-level precision in cider production
Far from industrial cider, Bordelet crafts his cuvées like natural wines: gentle pressing, slow fermentation, natural carbonation, minimal sulfites, no pasteurization. Each vintage expresses the character of the fruit, the soil, and the year. These are living, gastronomic ciders—balanced, refined, and full of life.
Signature cuvées with strong identity
Standouts include Sidre Tendre, delicate and slightly sweet, Brut Tendre, drier and more structured, the mineral-rich Poiré Granit, and the complex, vinous Argelette, made from tannic apples. These drinks belong on the table alongside fine white wines or sparkling food pairings.
A leading voice in the cider renaissance
Eric Bordelet has become a key figure in the global revival of artisanal cider. His high standards, precise technique, and deep respect for fruit have made his cuvées essential for lovers of natural wine, terroir-driven drinks, and authentic pleasure in every glass.
