An estate rooted in a high-altitude terroir
Located in the heart of the Terrasses du Larzac, Domaine du Pas de l'Escalette spans around twenty hectares of terraced vineyards, situated between 350 and 400 meters in altitude. Nestled in a preserved natural setting, surrounded by Mediterranean garrigue and traditional dry-stone walls known as "clapas," the estate benefits from a Mediterranean climate tempered by the altitude and the cooling influence of the Larzac plateau. The thermal contrast between warm, sunny days and cool nights allows for slow grape maturation, preserving their natural balance of acidity and aromatic complexity.
A philosophy centered on biodynamics and soil health
Since their arrival in 2003, Delphine and Julien Zernott have implemented environmentally friendly viticulture, earning organic and biodynamic certification. Believing that wine is made first and foremost in the vineyard, they practice manual and mechanical plowing, avoid herbicides, and promote natural ground cover. Treatments are carried out using herbal infusions and biodynamic preparations to enhance the vineyard’s natural balance and encourage biodiversity, which is essential to the health of the vines.
Indigenous grape varieties elevated through meticulous craftsmanship
The estate highlights Mediterranean grape varieties that thrive in these limestone soils. Old-vine Carignan provides structure and freshness to the red wines, while Grenache brings roundness and vibrant aromatics. Syrah, planted in the coolest plots, develops spicy and floral notes balanced by remarkable natural acidity. For the white wines, Carignan Blanc, Terret Bourret, and Grenache Blanc are vinified with minimal intervention to preserve the purity of the fruit.
Natural winemaking to showcase terroir expression
In the cellar, the estate follows a low-intervention philosophy. Fermentations occur using indigenous yeasts, without the addition of unnecessary oenological products. Gentle extractions are carefully controlled to highlight fruit expression and maintain the wines' natural elegance. Aging takes place in large foudres and demi-muids, adding subtle complexity without overshadowing the wines' minerality and finesse. Each cuvée is crafted as a true representation of its original terroir.

Domaine du Pas de l'Escalette offers a range of wines that perfectly illustrate the diversity and richness of the Terrasses du Larzac. "Les Clapas Rouge" is a harmonious blend of Carignan, Grenache, and Syrah, delivering a silky, spicy profile with remarkable drinkability. "Le Grand Pas" embodies the depth of old vines, with exceptional concentration and a persistent finish.
On the white side, "Les Clapas Blanc" expresses superb minerality, with notes of citrus and white flowers supported by vibrant freshness. "Ze Rozé," vinified like a white wine, stands out for its elegance and liveliness, showcasing the full potential of high-altitude Cinsault. Through each cuvée, the estate seeks to express the authenticity and complexity of its terroir, producing precise, pure, and vibrant wines.
