A Family History Rooted in Meursault
Domaine Xavier Monnot is located in the heart of Meursault, Burgundy, encompassing 17 hectares of vineyards stretching from Beaune to Maranges. Descended from a lineage of winemakers dating back to 1723, Xavier Monnot took over the family estate in 1994, succeeding his grandfather René Monnier. In 2005, he modernized the vineyard and cellar while marketing the wines under his own name.
A Prestigious Vineyard with Renowned Appellations
The estate produces both white and red wines, showcasing exceptional terroirs. Among the standout appellations, Meursault, Chassagne-Montrachet, and Puligny-Montrachet lead the whites, while Beaune, Pommard, and Volnay highlight the richness of Pinot Noir. Each cuvée results from meticulous vineyard and cellar work to capture the full essence of each plot.
A Sustainable and Thoughtful Viticultural Approach
Dedicated to preserving the terroir, Xavier Monnot practices sustainable viticulture, minimizing treatments and prioritizing manual soil cultivation. The vines, averaging 30 to 40 years old, are carefully maintained to ensure impeccable grape quality. Harvesting is done by hand, ensuring strict grape selection to preserve the wines' aromatic integrity.
Winemaking that Balances Tradition and Modernity
Each step of winemaking is designed to enhance the purity of fruit and terroir expression. The Chardonnay grapes are gently pressed before fermenting in oak barrels, followed by 12 to 14 months of aging on fine lees, adding complexity and a refined texture. The Pinot Noir grapes are destemmed before fermenting in stainless steel tanks, then aged in barrels, where the proportion of new oak is carefully adjusted to maintain the purity of aromas.
