Located in the hamlet of Touches in Mercurey, the Tupinier-Bautista Estate has been rooted in Burgundy's winemaking tradition since 1770. Passed down through generations, the estate is now managed by Manu Bautista, who succeeded his stepfather in 1997. Under his leadership, the estate has combined ancestral know-how with modern innovations to produce exceptional wines.

An 11-hectare vineyard on exceptional terroirs

The estate spans 11 hectares, primarily planted with Pinot Noir, offering a range of wines that reflect the richness of the Côte Chalonnaise terroirs. Notable parcels include:

  • Mercurey Premier Cru "En Sazenay": a mineral and saline white wine with inviting sweet accents.
  • Mercurey Premier Cru "Les Vellées": an energetic wine with citrus notes, vibrant and fresh.
  • Mercurey Premier Cru "Clos du Roy": a structured wine with fine tannins and a persistent finish.

These terroirs benefit from ideal exposure and soils conducive to viticulture, allowing for the creation of generous and fruity wines.

Winemaking blending tradition and modernity

In 2016, the estate equipped itself with a new, modern winery covering over 400 m², carved into the rock, ensuring a constant temperature throughout the year. This facility allows for optimal aging of wines in oak barrels. Harvesting is done manually, with rigorous sorting to select only the highest quality grapes. Fermentation lasts about 15 days, and the wines are aged in barrels for a year, imparting structure and generosity to the cuvées.
