Domaine Tollot-Beaut has been a cornerstone of Burgundy’s winemaking tradition since the late 1800s. Founded in Chorey-lès-Beaune, the estate took a decisive step in 1921 by being among the first in the region to bottle its own wines. This visionary move allowed the family to maintain complete control over quality and showcase the authentic expression of their terroir. Today, cousins Nathalie, Jean-Paul, and Olivier Tollot manage the estate, carrying forward the family’s commitment to excellence.
A Vineyard Rooted in Burgundy’s Finest Appellations
Located just north of Beaune, the estate spans approximately 24 hectares (60 acres), with vines in some of the most prestigious appellations of the Côte de Beaune. While its heart remains in Chorey-lès-Beaune, the domaine has expanded over the years to include parcels in Savigny-lès-Beaune, Aloxe-Corton, and Beaune Premier Cru vineyards. The estate also boasts two monopoles: Savigny-lès-Beaune Champs-Chevrey and the exclusive Chorey-lès-Beaune Pièce du Chapitre.
Respectful and Sustainable Viticulture
Domaine Tollot-Beaut follows a philosophy of lutte raisonnée, a sustainable viticultural approach that minimizes chemical intervention and prioritizes the natural balance of the vineyard. The estate favors old vines of Pinot Fin, a refined Pinot Noir clone, which produces concentrated and expressive wines. In the cellar, white grapes (Chardonnay) undergo gentle pneumatic pressing before fermenting in stainless steel tanks, while reds (Pinot Noir) are almost entirely destemmed to enhance purity of fruit and terroir expression. Over the years, the estate has reduced the use of new oak barrels, ensuring that its wines retain their finesse and authenticity.
