An unusual journey from the music industry to winemaking
Before taking over the family estate in 1992, Olivier Morin spent a decade in the radio and music industry. This surprising transition from turntables to grapevines reflects his deep passion for wine and the terroir of Chitry. He often notes that, like music, wine aims to provide pleasure, but with a more lasting and enriching dimension.
A family vineyard in the heart of Burgundy
Domaine Olivier Morin spans 14 hectares in Chitry, nestled between Auxerre and Chablis. This wine-growing village, set in a valley with slopes covered in vines, offers an exceptional terroir. The soils, primarily composed of Kimmeridgian limestone, are identical to those of the prestigious neighboring Chablis vineyards, imparting a distinctive minerality to the wines.
Environmentally friendly viticultural practices
Committed to sustainable viticulture, Olivier Morin employs methods that respect the ecosystem. The estate practices natural grass cover and avoids the use of herbicides, thus promoting biodiversity and soil health. This approach allows for the production of healthy grapes that faithfully reflect the Burgundy terroir.
Winemaking blending tradition and modernity
The estate's facilities, partially underground, enable gentle juice handling by gravity, minimizing oxidation. Fermentations are carried out with indigenous yeasts, and sulfur use is kept to the necessary minimum. This combination of traditional and modern techniques aims to preserve the purity and authenticity of the wines.
Signature cuvées revealing the character of Chitry
Among the estate's flagship wines, the "Constance" Bourgogne Chitry Blanc stands out for its freshness and minerality, derived from vines aged 10 to 25 years. In red, the "Vau du Puits" cuvée expresses the finesse of Pinot Noir cultivated on these limestone terroirs. Each bottle tells the unique story of a family vineyard where passion and expertise come together to offer authentic and memorable wines.
