Coming from a family of Causse farmers, he took over the family estate in 2006, situated on the appellation’s highest slopes. From the start, he adopted a modern, terroir-driven approach, emphasizing natural vinification and biodynamic farming. A High-Altitude Terroir Enhanced by Biodynamics
The estate spans 23 hectares at over 350 meters in altitude, rooted in the limestone soils of the Causse. This exceptional location imparts remarkable freshness and tension to the wines. Fully committed to biodynamics since 2011, Fabien Jouves eliminates chemical inputs and fosters natural vineyard cycles. This philosophy allows him to craft wines that are lively, authentic, and deeply connected to their terroir.
Natural Vinification for Emotion-Driven Wines
In the cellar, Fabien Jouves follows a minimalist approach: manual harvesting, indigenous yeast fermentation, gentle extractions, and aging in concrete tanks, large casks, or amphorae, depending on the wine’s profile. No additives, no unnecessary interventions—just the pure expression of Malbec and other grape varieties he vinifies with precision. This approach results in wines that stand out for their drinkability, aromatic brilliance, and silky texture.
