A Visionary of Whisky in France
Michel Couvreur, originally from Belgium, settled in Burgundy in 1978 with a revolutionary vision of whisky. He believed that more than terroir or distillation, it was the aging in oak casks that truly transformed grain spirit into whisky. Located near Beaune, he dedicated his life to perfecting this art, comparing the process to a form of cross-pollination.
A Unique Maturation Method
Michel Couvreur's whiskies begin their journey in Scotland, where they are distilled according to Scottish traditions. They are then transported to Burgundy, where they age in carefully selected sherry casks, stored in Burgundian cellars. This method imparts exceptional depth and aromatic complexity to the whiskies, blending Scottish and Burgundian influences.
Signature Expressions
Notable offerings from the house include:
- Overaged Malt Whisky: a blend of 12-year-old single malts, offering aromas of dried flowers, almonds, and smoke, with flavors of brown sugar, almond, peat, stone fruit, and spice.
- Pale Single Single: a single malt aged in Fino Sherry casks, presenting notes of tart apples, salinity, and a hint of peat.
- Blossoming Auld Sherried: a single malt aged in Pedro Ximénez casks, offering rich aromas of dried fruits and a velvety palate with notes of figs, prunes, and caramel.
