A Family Tradition Since the 16th Century
Located in Puligny-Montrachet, Domaine François Carillon stems from a winemaking lineage dating back to the 16th century. Records mention Jean Carillon as early as 1520, highlighting the family's deep-rooted commitment to viticulture and quality wine production. This passion and expertise have been passed down through generations, solidifying the estate's esteemed reputation over the centuries.
A Prestigious Vineyard in the Heart of Burgundy
The estate encompasses 16 hectares across the renowned appellations of Puligny-Montrachet, Chassagne-Montrachet, and Saint-Aubin. This prime location enables the production of a diverse range of white wines, primarily from the Chardonnay grape, faithfully reflecting the richness and diversity of Burgundy's terroirs.
Environmentally Conscious Viticulture
Committed to preserving the vineyard ecosystem, Domaine François Carillon employs environmentally friendly farming practices. Since 1992, weed control has been managed through plowing, eliminating the use of chemical herbicides. Treatments are limited to natural-origin products, and vine shoots are recycled into compost to enrich the soil, promoting sustainable and responsible viticulture.
Wines Combining Finesse and Elegance
Winemaking at the estate balances tradition and modernity. Hand-harvested grapes at optimal ripeness undergo gentle pressing before fermenting in oak barrels, with a moderate proportion being new. Aging on fine lees for approximately twelve months imparts aromatic complexity and a silky texture to the wines. They are distinguished by their purity, precision, and ability to express the unique identity of each parcel.
International Acclaim
Domaine François Carillon's wines are acclaimed by enthusiasts and professionals worldwide. Featured on the menus of top restaurants and praised by critics, they embody Burgundy's excellence and craftsmanship. Each bottle reflects a centuries-old family heritage and an unwavering commitment to quality and respect for the terroir.
