A Family Heritage Since 1901
Located in Gevrey-Chambertin, Burgundy, the Dominique Gallois Estate embodies a passion passed down through four generations. In 1901, Guillaume Bizot, Dominique's great-grandfather, constructed a remarkable cellar and family home at 9 rue Maréchal de Lattre de Tassigny. At that time, the estate owned vineyard parcels extending to Volnay. However, family successions led to the division of the vineyard, and his daughter, Charlotte Gallois, inherited 2.5 hectares in Gevrey-Chambertin. Her son, Jean Gallois, Dominique's father, managed the estate for nearly 40 years, primarily focusing on supplying wine merchants.
Modernization Under Dominique Gallois
In 1989, Dominique Gallois took over the family estate with a vision to modernize and expand it. He introduced new winemaking techniques and began bottling the wines starting with the 1989 vintage. Through his efforts, the estate shifted towards a private clientele, gaining recognition from professionals, wine guides, and enthusiasts. Dominique emphasizes respect for the terroir, believing that a wine's quality stems from its origin, the age of the vines, and the year's climatic conditions.
An Exceptional Vineyard in the Heart of Côte de Nuits
The estate spans 4 hectares, encompassing seven prestigious appellations, including the Grand Cru Charmes-Chambertin and several Premier Crus such as Combe aux Moines, Petits Cazetiers, and Les Goulots. The vineyards, primarily planted with Pinot Noir, receive meticulous care throughout the year. The estate's philosophy centers on rigorous vineyard work, allowing for minimal intervention in the cellar. This approach aims to let the terroir fully express itself through authentic wines that truly represent their origin.
Winemaking Practices Merging Tradition and Innovation
Winemaking at Dominique Gallois Estate begins with a cold pre-fermentation maceration, the duration of which varies depending on the vintage. This process enhances aroma extraction and optimizes grape potential. Fermentation occurs solely with indigenous yeasts and lasts between 10 and 15 days. During this time, manual punch-downs and pump-overs are carried out to extract tannins and flavors gently. The wines then age for approximately 18 months in Allier oak barrels, with a carefully controlled proportion of new wood to ensure that the wine's natural aromas are not overpowered.
Wines Reflecting the Purity of the Terroir
Dominique Gallois Estate wines are renowned for their finesse, elegance, and aging potential. Each cuvée faithfully expresses its unique climate, offering subtle aromas of red and black fruits alongside floral and spicy notes. For example, the Gevrey-Chambertin "Les Petits Cazetiers" is often described as a "feminine" wine, balancing delicacy and complexity with a velvety texture and discreet tannins. These wines, crafted with deep respect for tradition and terroir, attract both connoisseurs and collectors seeking authentic, refined Burgundy crus.
