A Passionate Winemaker in the Heart of Roussillon

Originally from Anjou, Olivier Pithon settled in Calce in 2001, driven by the desire to create great Roussillon wines. Inspired by his grandfather and his renowned winemaker brother, Jo Pithon, he acquired 7 hectares of vines and founded Domaine Olivier Pithon. Today, the estate spans 19 hectares, cultivated biodynamically, reflecting a deep respect for nature and terroir.

An Exceptional Terroir Between Sea and Mountains

Located at approximately 300 meters altitude, the vineyard benefits from varied geology composed of marl, schist, and limestone. This diversity, combined with the influence of the Mediterranean, the Pyrenees, and the Corbières, imparts remarkable complexity and minerality to the wines. The white grape varieties include Macabeu, Grenache Gris, and Blanc, while the reds are primarily composed of Carignan, Grenache Noir, and Mourvèdre.

Biodynamic Viticulture Respectful of the Environment

From the outset, Olivier Pithon adopted biodynamic practices, believing that respecting the land is essential for producing authentic wines. No chemical herbicides or pesticides are used; soils are carefully worked to preserve biodiversity. This approach allows each cuvée to fully express the terroir's potential.

Emblematic Cuvées Combining Finesse and Character

The estate offers a range of wines reflecting the richness of Roussillon. The "Laïs" cuvées, named in homage to the estate's Jersey cow, stand out for their freshness and depth. "Laïs Blanc" is a blend of Macabeu, Grenache Blanc, and Gris, offering floral notes and beautiful minerality. "Laïs Rouge," composed of Carignan, Grenache Noir, and Mourvèdre, delights with its red fruit aromas and elegant structure. The parcel selections, such as "La D18" and "Le Pilou," highlight specific vineyard plots, offering wines of great complexity and exceptional length.

Domaine Olivier Pithon, a Roussillon Benchmark

Through its commitment to sustainable viticulture and expertise, Domaine Olivier Pithon has established itself as a key reference in Roussillon wines. Its cuvées, appreciated by enthusiasts and critics alike, brilliantly illustrate the potential of this wine region. Tasting an Olivier Pithon wine is to discover the perfect harmony between man, vine, and terroir.
