The collaboration between Frédéric Savart, an innovative winemaker from the Montagne de Reims, and the family-run house Drémont Père & Fils, located in Charly-sur-Marne, has led to a series of unique cuvées under the name Éphémère. This partnership aims to highlight exceptional terroirs through limited-edition Grand Cru champagnes.
Each Éphémère cuvée reflects a specific year and particular terroir. The grapes are meticulously selected, primarily from Grand Cru classified parcels. Vinification adheres to traditional methods, with slow fermentation and extended aging on lees, developing complex aromas and a refined texture.
The Éphémère 018 cuvée is crafted exclusively from Chardonnay sourced from the Grand Cru villages of Cramant, Le Mesnil-sur-Oger, Avize, and Oger. Harvested in the 2018 vintage, the grapes undergo five years of aging under cork, imparting remarkable depth and complexity to the champagne. With a precise dosage of 3 g/l, this cuvée offers a perfect balance between freshness and maturity.
The Éphémère 017 cuvée presents a harmonious blend of 74% Chardonnay and 26% Pinot Noir, sourced from the Grand Cru villages of the Côte des Blancs and the Montagne de Reims. This champagne is distinguished by its copper hue and expressive aromas of ripe fruits and brioche notes. The palate is ample, supported by lively acidity that brings a beautiful length to the finish.
Drémont-Savart champagnes are produced in very limited quantities, with each cuvée numbered and available only in specific vintages. This rarity, combined with exceptional quality, makes these bottles highly sought after by connoisseurs and collectors worldwide.
