Should I wait longer before opening "À l'Aube" 2021?

Appearance: Pale yellow with green highlights.
Nose: Expressive bouquet of white flowers, citrus fruits, with a mineral touch.
Palate: Fresh and lively, with balanced acidity and pleasant roundness, flavors of pear and green apple.

The stated aging potential is five years, so in 2026 this vintage reaches the end of its recommended period. It's best to open it rather than keep it for longer.

How should I serve "À l'Aube" to enjoy its bouquet?

Serve it between 10 and 12 °C to appreciate its notes of white flowers and citrus, along with its mineral touch. A brief decanting may help bring out the aromas, but it is not essential.

Is this white wine suitable if I like freshness but not wines that are too sharp?

Its profile combines a lively palate and bright acidity with a pleasant roundness. This balance may suit you if you're looking for freshness without sacrificing a certain softness, with flavors of pear and green apple.

Can I serve the same bottle with asparagus risotto and then goat cheese?

Yes, both asparagus risotto and aged goat cheese are among the recommended pairings. "À l'Aube" can therefore accompany both courses without needing to change wines.

Is this a good choice if I prefer whites focused on fruit rather than oak?

Yes: aging in tanks emphasizes freshness and aromatic purity. The tasting notes highlight white flowers, citrus, pear, and green apple, with no mention of oaky character.
