Highland-grown blue agave
Don Julio uses blue Weber agave grown in the rich volcanic soils of the Highlands of Jalisco, near Atotonilco El Alto. Thanks to optimal sun exposure and elevation, the agaves develop great sweetness and complexity. Harvested at full maturity after 7–10 years, the piñas are slowly cooked, then fermented and distilled with care to preserve their natural softness.
