A family history rooted in the Chablis terroir
In 1990, Isabelle and Denis Pommier, then young and passionate, took over two hectares of family vines around the village of Poinchy, near Chablis. Their ambition: to produce authentic wines that express the richness of their terroir. Today, the estate spans 16 hectares, covering prestigious appellations such as Petit Chablis, Chablis, and three renowned Premier Crus: Fourchaume, Côte de Léchet, and Troesmes.
An early commitment to organic farming
From the outset, the Pommiers adopted an environmentally friendly approach, practicing sustainable viticulture. Encouraged by the qualitative results, they transitioned to organic farming, achieving certification in 2014. This pioneering effort in a region with a challenging climate demonstrates their determination to preserve biodiversity and soil health.
Manual harvesting for optimal quality
Uncommon in the region, the estate favors manual harvesting for a significant portion of its production. The Premier Crus and select old-vine Chablis parcels are handpicked, with meticulous sorting in the vineyard and on sorting tables. This careful attention ensures grapes of optimal quality, essential for crafting wines that faithfully reflect their origin.
Winemaking blending tradition and innovation
In the cellar, fermentations are conducted with indigenous yeasts, promoting an authentic expression of the terroir. Chablis and Petit Chablis ferment exclusively in stainless steel tanks, preserving their freshness and purity. The Premier Crus and Chablis "Croix aux Moines" undergo mixed aging, combining used oak barrels and stainless steel tanks over 18 months, adding complexity and balance to the wines.
Generous wines with mineral nuances
The wines of Domaine Pommier stand out for their generosity on the palate, combining power and amplitude while maintaining a saline minerality characteristic of Chablis.
