What should I choose between this 2021 Savagnin and the 2023 Chardonnay Savagnin "Tradition"?

Appearance: Pale yellow color with subtle golden highlights.
Nose: Delicate aromas of fresh walnut, green apple, white flowers, and a hint of minerality.
Palate: Fresh and lively, revealing notes of candied lemon, hazelnut, and a slightly saline finish, characteristic of Savagnin.

Choose this 2021 if you want to focus on Savagnin, the only grape variety listed for this bottle. The 2023 "Tradition" cuvée blends Chardonnay and Savagnin, making it a better choice if you'd like to explore their combination.

Are this 2021 Savagnin and the estate's Vin Jaune the same cuvée?

No: the catalogue lists this 2021 Côtes du Jura Savagnin separately from the 2019 and 2016 Côtes du Jura Vin Jaune. So if you're specifically looking for a Vin Jaune, don't choose this bottle based solely on the mention of the Savagnin grape.

Does choosing this instead of the 2025 Chardonnay mean discovering a more developed wine?

The 2021 Savagnin is from an older vintage, but that alone isn't enough to claim it has a more developed profile. The grape variety also differs: choose it to explore Savagnin rather than based on an assumption about its maturity.

What tasting theme would make this bottle worth opening?

A discovery of the grape varieties of the Jura gives it a clear role: representing Savagnin among the white wines. The same estate's Chardonnay offers another point of reference, though the information provided doesn't allow us to predict how their aromas differ.
