Would this Sancerre suit someone who is wary of overly acidic whites?

Appearance: Pale yellow with light green highlights.
Nose: Intense and fresh, with citrus, green apple, and typical herbaceous notes of Sauvignon Blanc.
Palate: Lively and balanced, marked acidity, beautiful minerality, and a persistent saline finish.

The acidity is pronounced, so it is not the most obvious choice for someone who prefers whites with less zing. However, the 2024 vintage strikes a balance between acidity and fruit, with a lively palate rather than a purely austere profile.

Between sea bream ceviche and scallop tartare, should I plan to serve two different wines?

This Sancerre can accompany both dishes, which are among the recommended pairings. Its citrus notes echo the citrus in the scallop tartare, while its freshness and saline finish complement the raw fish.

Does the Sauvignon Blanc's herbaceous character overpower the fruit in this cuvée?

The tasting notes highlight citrus and green apple, accompanied by a hint of herbs. So you can expect a Sauvignon Blanc with plenty of fresh fruit, rather than one dominated by vegetal notes.

When should I drink the 2024 if I mainly want to enjoy its fruit and freshness?

The recommended drinking window is within the next three to five years to make the most of its freshness. It is said to evolve well for up to seven years if properly stored, but there is no need to wait that long: this vintage is ready to enjoy fairly early.

Can I choose it as an aperitif wine even if no meal is planned afterwards?

Yes, an aperitif is one of the recommended occasions for this Sancerre from Vacheron. Its fresh, lively and mineral profile is particularly suited to fans of vibrant whites; you could serve it with a fresh Crottin de Chavignol if you would like to offer a small cheese plate.
